Recipe April 17th: Halibut & Tomato Crostini

Halibut & Tomato Crostini

-6 oz. halibut fillet
-6 teardrop tomatoes (red or yellow), sliced thin lengthwise
-2 tbsp chopped fresh herbs
-3 tbsp extra virgin olive oil
-Splash of balsamic vinegar
-Coarse salt
-Cracked black pepper
-Baguette, sliced thin

-Preheat oven to 350.
-dice halibut
-Sear over medium-high heat in 1 tbsp olive oil
-Remove from heat, toss with 1 tbsp olive oil, tomatoes, herbs, balsamic salt & pepper
-Place sliced baguette on a cookie sheet & drizzle with olive oil
-Toast until just lightly brown
-top with a tbsp of halibut/tomato mix
