Midday Recipe 3-18: Pan-seared tilapia with garden vegetable salsa

Pan Seared Tilapia with Garden Vegetable Salsa

Ingredients

•       2 oz. Zucchini

•       2 oz. Yellow Squash

•       2 oz. Diced Red Onions

•       2 oz Tomatoes

•       2 oz. Broccoli Florets

•       2 oz. Yellow Corn

•       1 tbsp. Chopped Fresh Basil

•       1 tbsp. Chopped Garlic

•       1 tsp. Fresh Chopped Parsley

•       1 oz. Extra Virgin Olive Oil

•       Juice of 1 Lemon

Directions

•       Take 4 oz filet of tilapia and pat dry

•       Lightly season to taste with sea salt and black pepper

•       Heat 1 oz. of olive oil in a non-stick pan

•       Add tilapia and sear on one side for 3 min. or until golden brown

•       Flip and repeat

•       Remove from pan and add salsa
