Jan 17th Recipe: White Bean Soup by Lori Sours

Salsa Senorita's Spicy White Bean Chili

 

  • 3-4 15 oz cans of great northern white beans rinsed and drained
  • 2 lbs. boneless chicken – cooked and cubed
  • 4 strips of bacon
  • 1 Tbsp. olive oil
  • 2 medium onions, chopped
  • 4 minced garlic cloves
  • 1 cup of Salsa Senorita
  • 2 tsp. ground cumin
  • 11/2 tsp. oregano
  • ¼ tsp. cloves
  • ¼ tsp. red pepper
  • 6 cups chicken broth
  • 3 cups Monterrey Jack cheese, grated

Sour cream, salsa and cilantro for garnish

Heat oil and sauté bacon, add spices and cook for 2 minutes.  Add beans and stock.  Bring to a boil and reduce heat for 10 to 15 minutes.  Add chicken and 1 cup of cheese.  Simmer for 1 hour before serving.  Serve with fritos or tortilla chips.
