Preheat oven to 350 degrees.
Spray 9 x 13 pan or bread loaf pan with non-stick spray.
In large mixing bowl combine and mix, just to combine:
2 lbs ground beef (can be combo of veal, beef)
10-12 sliced of pepperoni, diced
1 cup bread crumbs
2 cups shredded Parmesan cheese
3 large eggs
¼ cup diced red bell peppers (can use green)
¼ cup diced onions
2 tablespoons Worcestershire sauce
2 tablespoons Balsamic vinegar
1 tablespoon dried basil leaves
4 teaspoons minced garlic (about 3 medium cloves)
2 teaspoons dried parsley flakes
2 teaspoons kosher salt (optional)
1 teaspoon black pepper
Form into a loaf in pan.
Top meatloaf with 1 cup marinara (or pizza) sauce. And add several slices of pepperoni on top of sauce.
Bake for 45-55 minutes until done (160 degrees). Let rest 10 minutes before serving.
