Recipe Jan 8: Meatloaf Italiano

  1. Preheat oven to 350 degrees.

 

  1. Spray 9 x 13 pan or bread loaf pan with non-stick spray.

 

  1. In large mixing bowl combine and mix, just to combine:

  1. 2 lbs ground beef (can be combo of veal, beef)

  2. 10-12 sliced of pepperoni, diced

  3. 1 cup bread crumbs

  4. 2 cups shredded Parmesan cheese

  5. 3 large eggs

  6. ¼ cup diced red bell peppers (can use green)

  7. ¼ cup diced onions

  8. 2 tablespoons Worcestershire sauce

  9. 2 tablespoons Balsamic vinegar

  10. 1 tablespoon dried basil leaves

  11. 4 teaspoons minced garlic (about 3 medium cloves)

  12. 2 teaspoons dried parsley flakes

  13. 2 teaspoons kosher salt (optional)

  14. 1 teaspoon black pepper

 

  1. Form into a loaf in pan.

 

  1. Top meatloaf with 1 cup marinara (or pizza) sauce. And add several slices of pepperoni on top of sauce.

 

  1. Bake for 45-55 minutes until done (160 degrees). Let rest 10 minutes before serving.
