August 16th Recipe: Scallops with Serrano and Yellow Corn Relish

6 jumbo diver sea scallops

1 tsp virgin olive oil 

1/2 cup corn kettle 

1 Serrano pepper 

Salt/ pepper

1 tsp honey

1/2 tsp ground cinnamon

 

Dry out the scallops. Grill scallops in skillet over medium heat with salt and pepper until golden brown. Meanwhile, add olive oil, serrano peppers and yellow corn to pan over medium heat and toss until tender. Mix honey and cinnamon together for drizzle. Place scallops on plate, top with vegetable mixture, then drizzle with honey mixture.
