MEDITERRANEAN QUICHE


Vegetable Quiche

Ingredients:

1 unbaked pie shell

2 tbsp olive oil

1 small onion, diced

1 tbsp garlic, minced

4 large eggs

1 C milk or half and half

 

 

 

1 medium tomato, chopped

½ C pitted kalamata olives, halved

1 tbsp nonpareil capers, drained

¼ C feta cheese, crumbled

1 tbsp garden fresh herbs (rosemary, oregano, basil…)

Salt & Pepper, to taste

 


 

Seafood Quiche:


Ingredients:

1 unbaked pie shell

2 tbsp olive oil

1 small onion, diced

1 tbsp garlic, minced

4 large eggs

1 C milk or half & half

½ C mayonnaise

4 oz lump crab meat

1 C cooked shrimp

½ C sliced green onion

1 tbsp garden fresh herbs (rosemary, oregano, basil…)

½ C grated kasseri cheese

Salt & Pepper, to taste

 

 

Directions for both:


-preheat oven 350

-saute onion and garlic in olive oil

-whisk eggs and milk (and mayonnaise) together

-fold or mix in remaining ingredients

-pour into pie shell

-bake until set, approximately 30-40 minutes, or until knife inserted comes out clean  

 

 

MEDITERRANEAN BAKED APPLES

 

 


Ingredients per person:

1 granny smith apple

1/3 C Greek yogurt

1 tbsp of honey

1 tbsp walnuts, chopped

1 tbsp raisins

sprinkle of cinnamon

Fresh mint

 

 

 

Directions:

-preheat oven to 350

-core apple, with an apple corer or sharp knife

-make slits around "waist" of apple

-place in casserole dish or skillet

-fill core with walnuts, raisins, honey and cinnamon

-pour approximately ½" water into pan and bake for 40 minutes, until apple is soft and golden brown

-serve warm, topped with yogurt and garnished with mint, or chill apple, then add yogurt and mint
