Strawberry Panzanella salad
 
1 cup of sliced strawberries
2 cups of croutons (white bread), the older the better
1 diced tomato (the ripest that you can find)
1/3 cup of sliced red onion
1 cup of diced cucumber
2 cups of chopped lettuce (this is optional)
1/4 cup chopped basil
1 cup of olive oil (extra virgin if possible)
1/4 cup red wine vinegar
salt and pepper
 
Direction:
Whisk 1 cup of olive oil (extra virgin if possible), 1/4 cup red wine vinegar, salt and pepper together.
chopped all other ingredients and sit those in a mixing bowl. add dressing, mix well and serve. This salad CANNOT be made ahead of time, it's better if eaten within few minutes from preparation.
 
Linguine Carbonara

1/2 bacon (in Italy we use Guanciale - bacon but from the meat of the cheek. The difference between the two, bacon is simply smoked or air-dry, the guanciale is covered with a mix of spices such as garlic, rosemary and sage and then air-dry)
1/4 cup of cream per person
1 egg per person
salt and pepper
1/4 of pecorino cheese (same as parmesan cheese but from sheep milk instead of cow's milk. Much sharp flavor compare to the parmesan)
 
Direction:
Cook pasta as directed from the box. in the mean time, in a skillet, cook bacon, and do not throw away fat.in a small bowl, add cream, egg/s, salt and pepper, cheese and whisk it together. Once pasta is cooked, drain it from water, add it to the pan with bacon, add mix of egg/s and cream and toss. Serve and eat IMMIDEATELEY.
