Recipe June 12: Scottie's Smashed Potatoes

Scottie's Smashed Potatoes







2 pounds small red potatoes
2 tablespoons olive oil

2 tablespoons sour cream
2 scallions, chopped, whites and greens
2 teaspooons of your favorite chopped herb

(thyme, oregano, basil or rosemary)
Salt and Pepper to taste

Cover the red-skinned potatoes in water in a medium saucepan. Bring water to a boil and cook potatoes 10 minutes or until fork tender. Turn heat under pan off; drain potatoes and return to a hot pan or griddle to caramelize the potatoes and add the other ingredients. (Do this just prior to serving.)


Add olive oil, sour cream, scallions, and chopped herb and smash to your desired consistency.


Season potatoes with salt and pepper to taste.

Serve hot!
