May 17th Recipe: Fried Zucchini

Fried Zucchini for 4-6 people Estimated prep/cook time 10 minutes

2 Zucchinis'

2 cups flour

4 eggs

1/2 cup heavy cream

3 cups seasoned Italian breadcrumbs

2 Tbsp. grated parmesan cheese

1 Tbsp. Lemon pepper

4 oz. Vegetable oil


Cut ends off of zucchini. Cut rest into long strips about 1/4 inch around.

Put eggs into a mixing bowl and whisk together, slowly pouring in the heavy cream.

Take zucchini sticks and flour dust them, dip them into the egg wash mixture, then pat a coating of the seasoned breadcrumbs on.

Heat oil in a skillet on medium heat. When heated place breaded zucchini in oil and fry till golden brown (about 2 minutes)


Place fried zucchini onto paper towel to dry off excess oil.

Place on plate and sprinkle parmesan and lemon pepper over the top.

Best served with our Creamy Italian dressing.
