Scottie’s Best Banana Pudding

Recommended Ingredients

  • 4 ounces of softened cream cheese
  • ¼ cup granulated sugar
  • ½ cup of sour cream
  • 1 teaspoon of vanilla
  • 1 tablespoon of Banana Schnapps (optional)
  • 8 ounces of whipped cream or Cool Whip style.
  • 4 cups of base vanilla pudding (cooled)

Directions

If you are making your base pudding from scratch, see the recipe that follows under OPTIONS.  Otherwise, proceed with the next step here.

In a large bowl, beat the cream cheese and sugar until well mixed and creamy.  You don't want lumps in your pudding.  Add the sour cream, vanilla and schnapps and mix well.

Add the whipped cream (or Cool Whip) to the mixture and whisk or mix well.  Finally, add the vanilla pudding and mix until completely blended in color and texture.

This makes a delicious Banana-flavored mixture as it is or can be used to make a layered southern-style banana pudding with layers of vanilla wafers and bananas.

OPTIONS


Original Nilla Banana Pudding -- Ready in: 60 mins.

3/4 cup sugar, divided
1/3 cup all-purpose flour
Dash salt
3 eggs, separated
2 cups milk
1/2 teaspoon vanilla extract
45 NILLA Wafers, divided
5 ripe bananas, sliced (about 3 1/2 cups), divided
Additional NILLA Wafers and banana slices, for garnish

1. Mix 1/2 cup sugar, flour and salt in top of double boiler.
Blend in 3 egg yolks and milk. Cook, uncovered, over boiling water,
stirring constantly for 10 to 12 minutes or until thickened. Remove
from heat; stir in vanilla.

Once cooled, add Scottie's Recommended Ingredients to this pudding.

CLASSIC BANANA PUDDING DISH

Slice 5 ripe bananas (about 3 ½ cups), and mix in with the pudding.  Make sure they are all covered to keep them from browning.

Layer a casserole pan or glass bowl with vanilla wafers and alternate adding the banana pudding mix and wafers to create your own masterpiece with just the right amount of each for your own personal taste.

SCOTTIE'S PEANUT BUTTER BANANA PIE

 

1 - 9"Oreo or Graham Cracker pie crust

½ cup of creamy peanut butter

1 ½ cups powdered sugar

8 ounces of Whipped Cream or Topping

 

Make the base pudding mix as described above plus in a mixing bowl, add ½ cup of peanut butter to 1 ½ cups of powdered sugar.  Combine with a fork or pastry cutter until the mixture is coarse and not sticky.  If still a bit sticky, add a bit more powdered sugar and continue with fork until coarse mixture is formed.  Set aside 2 tablespoons of the peanut butter mix.

 

Place the peanut butter crumble in the base of your pie crust.  Top with enough of the banana pudding mixture to reach the top of the pie crust.  Top with the whipped cream and sprinkle the remaining peanut butter mixture over the top for decoration.  Add a few well placed Vanilla wafers for decoration!  Keep chilled until ready to serve.

    Investigators in Gadsden said a man strangled his ex-girlfriend Tuesday evening before stabbing another man to death. Officers arrested 30-year-old William D'Angelo McKinney Wednesday night. He faces charges for murder and domestic violence with strangulation. Police said McKinney went to his ex-girlfriend's home in the Mill Village area and let himself in. Investigators said she asked him to leave, but he shoved her and then put her in a headlock until she blacked out.More >>
