
Spiced Pumpkin Brulee
Ingredients:
Heavy cream - 1 1/2 cups
Milk - 1/2 cup
Cinnamon - 1/8 tsp
Nutmeg - 2 pinches
Ginger, ground - 1 pinch
Ground cloves - 1 pinch
Egg yolks - 4
Sugar - 1/2 cup
Canned pumpkin puree - 1/4 cup
Sugar, for top - 1/3 cup
Directions:
1 - Heat cream, milk, cinnamon, nutmeg, ginger, and cloves until just boiling. Turn off and rest 15 minutes.
2 - In bowl whisk yolks and sugar and temper in cream mix. Add tempered mix to cream and whisk in pumpkin.
3 - Pour into ramekins and bake in water bath for 30-40 minutes.
