Courtyard Cafe's Roasted Pork Loin & Beer Cheese Macaroni

Roasted pork loin:

2 lb pork tender loin

2 tablespoons olive oil

2 cups cider vinegar

1/4 cup stone ground mustard 

10 strips of bacon

Salt and pepper

 

Directions:

1. Preheat oven to 375 degrees

2. Pour oil into a sauté pan on moderate heat.

3. Season pork with salt and pepper and sear on all sides

4. Place loin on a roasting rack and spread mustard over the top

5. Wrap the loin with the bacon and pour cider vinegar in bottom of roasting pan

6. Place in oven for about 35 min or until internal temperature reaches 145 degrees. Remove from oven let sit to rest for about 5 min on a cutting board. Slice and serve.

 

Beer Cheese Macaroni:

1 1/2 cups elbow macaroni

2 tablespoons butter

1 tablespoon olive oil

1 large shallot (minced)

4 tablespoons AP- flour

2 cups whole milk

10 oz sharp cheddar cheese (shredded)

3/4 cup dark beer

1 tablespoon minced garlic

Salt and pepper to taste

 

Directions:

1. Preheat oven to 350 degrees 

2. In a large pot bring 4 quarts salted water to a boil and add pasta boiling about 10 min. or until pasta is tender. Drain

3. In a sauce pan add butter and olive oil to sauté shallots until almost translucent. Add your garlic and flour stirring constantly until forming a smooth paste. Add your cheese and stir continually until cheese is completely melted. Remove from heat and add your beer.

4. In a 9x9 baking dish spray with non-stick cooking spray. Add your cooked pasta to your cheese sauce until coated and pour into baking dish. Cover with foil and bake for 10 min. Uncover your pasta and bake an additional 10 min. Serve and enjoy.
