
INGREDIENTS:
For sauce
1 lb chicken breast
8 oz fire roasted peppers
8 oz mushrooms
1 large onion
2 cups cream
Salt and pepper to taste
2 tbsp olive oil
2 lbs penne pasta
METHOD:
sauté onion in olive oil
add cubed chicken breast pieces
add sliced mushrooms
add fire roasted peppers
add cream
reduced heat
add salt and pepper to taste and reduce heat for 15 minutes
Meanwhile, cook your pasta in 12 quarts of boiling salted water for
12-15 minutes to your personal preference
Drain pasta
Add to sauté pan and stir until well incorporated
Add fresh grated cheese and enjoy!
