INGREDIENTS:
1 Boneless Leg of Lamb
Fresh Lemon Juice (1/2 Cup)
2-3 Garlic Cloves
1/4 Cup Greek Oregano
1 Teaspoon of Salt & Pepper Each
1/4 Cup Olive Oil
DIRECTIONS:
- Place boneless legs of lamb in baking dish
- Cut slits into lamb (6-7 slits)
- Stuff with fresh garlic cloves
- Pour on fresh lemon juice
- Coat lamb with olive oil
- Add rest of spices (like a rub)
- Bake lamb at 300-350 degrees until it reaches internal temperature of 150 degrees
- Bast lamb with additional lemon juice and olive oil during cooking.
- ***DO NOT OVER COOK, LAMB HAS A TENDENCY TO DRY OUT***
