Scottie’s Thai Chicken Club

Yield: 4 Sandwiches


4 Buns (sesame seed, sour dough or your favorite bun)

½ cup peanut sauce (recipe to follow)

2 cups shredded whole milk mozzarella cheese

8 Chicken Tenders, cooked and still hot (or enough to fill the buns)

Scottie's Thai Slaw (recipe to follow)

8 strips of cooked bacon (optional)


Thai Peanut Sauce

Yield:  ½ cup sauce

¼ cup peanut butter

2 tablespoons Hoisin sauce

1 tablespoon honey

1 tablespoons sesame oil

1 tablespoon fresh minced ginger

1 teaspoon fresh minced garlic in water

1 teaspoons soy sauce


In a medium bowl combine all ingredients until smooth. 


Thai Slaw


1/4 cup shredded carrots (use grater or shred very thin with knife)

1/4 cup thinly shredded green onion (cut lengthwise)

2 tablespoons of shredded coconut (optional)

1/4 cup shredded cole slaw (raw cabbage not with sauce)

2 tablespoons of diced peanuts


Toss all ingredients together in a bowl and set aside.




  1. Optional:  Toast or grill the bun and spread the Thai Sauce on both open sides of the bun.


  1. Place 2 pieces of the cooked chicken tenders on the bottom bun.  Top with the Thai Slaw and 2 pieces of cooked bacon.


  1. Top with the shredded (or sliced mozzarella cheese) and cover with top bun.


  1. Serve warm and enjoy!
