Add ½ cup of cocoa (more to
taste) when you add the sugar and lemon. Mix well.
Add ½ cup of melted chocolate
chips, cooled but still pourable after the previous step. Mix well! Pour in pans as instructed above!
Also, instead of using the
ginger snap crust, just put a bag of Oreo cookies in the food processor
and pulverize into a perfect crumb crust!
No need to add butter or sugar to the crumbs…the Oreo filling works
nicely!
Raspberry Swirl Cheesecake:
When the mixture is ready to
be poured into pan, only pour half of mixture then add your raspberry (or
other flavor) puree to mixture and swirl lightly (don't try to completely
mix it) for visual effect.
Pour rest of mixture over
batter and repeat with the puree and swirl for visual effect.
Bake according to previous
instructions.
Additional Ideas:
You can add your favorite
fresh fruits to the chilled cheesecake for decoration and great variety of
flavors. Be creative!
Try adding chocolate shavings
from your favorite chocolate bar like Hershey with Almonds, or Hershey's
plain, Dark Chocolate, White Chocolate, etc. You can either add it as soon as it
comes out of the oven or garnish the top once chilled.
Helpful Hint: The easiest way to shave the chocolate
is with a vegetable peeler. The colder the chocolate, the smaller the
shavings. So if you want big
shavings, keep the chocolate bar at room temperature. If you want smaller, keep it in the
fridge until you are ready to shave the bar.
Whipped Cream makes a great
topping to the cheesecake. Homemade
whipped cream gives you more flexibility to add flavorings like some of
the raspberry puree OR add some cocoa to the whipped cream and make it a
delicious Light chocolate whipped cream!
