INGREDIENTS                                                                             AMOUNTS

New Potatoes                                                                                                2 ½ lbs

Celery diced                                                                                                   ¾ cup

Fresh Dill chopped                                                                                       ½ cup

Fresh Parsley minced                                                                                     2 tbs

Green Onions                                                                                                ½ cup  


Vinaigrette Dressing

Tarragon Vinegar                                                                                           1 ½ tbs      

Dijon Mustard                                                                                                ½ tsp

Clove of Garlic minced                                                                                   1

Olive Oil                                                                                                         4 ½ tbs

Salt                                                                                                                  ½ tsp

Pepper                                                                                                             ½ tsp

Shallots minced                                                                                               2


1. Combine vinegar, mustard, garlic, and shallots in a bowl. Whisk in oil, add salt & pepper                                                                      



  1. Cover Potatoes with salted water in large pot. Boil gently just under tender.  Drain. Cool slightly. Slice Warm Potatoes. Place in a large bowl. Toss with Vinaigrette. Let Stand for 30 minutes.
  2. Mix, celery, green onions & herbs into warm new potatoes. Adjust seasonings. Can serve room temperature.
