Brian C. White's Butternut Squash Puff Pastry Pizza
What do you need?
1 Butternut Squash skin peeled and diced
Smoked Cheddar Cheese grated 8oz
Fresh Sage: 4 Leaves minced and have 5-6 whole leaves picked out as well
Olive Oil: 2 tablespoons
Ready Made Puff Pastry: 11 1/2oz
Egg Wash: 1 Large Yolk beaten with 1tsp of water
sea salt and pepper for taste
Putting it all together:
Heat Oven to 425 F or 220 C for convection. Heat the olive oil in a pan, add the diced butternut squad and cook it for about 5 minutes or until it softens.
On a 6 x 10 baking pan roll out your Ready Made Puff Pastry and fill in the dish. Using a sharp knife mark about an inch border around the pastry but make sure not to cut all the way through. Brush the border with the egg wash.
Take 4oz or half of the smoked cheddar cheese and sprinkle it within the border, then add the butternut squash. Sprinkle the minced fresh sage over the squash and cheese, then add your salt and pepper.
Place the butternut squash puff pastry pizza into your oven and Bake for about 20 minutes. After 20 minutes take the pizza out and sprinkle the remaining cheese over it and place it back into the over for another 5 to 6 minutes or until the pastry is golden brown and the cheese fully melted.
Take the finished pizza out of the oven and take the whole sage leaves you were saving and sprinkle.
Cut into squares and serve.
